Old Picture Collection

New Old Pictures About Tuscarora

July 22, 2009 - During the 2009 Tuscarora Picnic the TEP booth had the opportunity to share with everyone a collection of photographs from the 1950s. W. Greene loaned us his 125+ page binder of photographs from the days of the SPA project.

Most of the photographs are of aerial shots of individual homes at Tuscarora. It's a great collection and we are in the process of scanning, and cataloging them for our Old Picture Collection. We hope to complete the project by the end of this summer.

Hydrocooling Your Vegetables

Chilled Vegetables, Sizzling Quality

July 20, 2009 - The Tuscarora Community Supported Agriculture garden is in full swing. Our summer interns are hard at work tending to the vegetables and weeds over at the garden this summer.

Summertime means harvesting in hot weather! By cooling your produce with water before refrigerating it, your vegetables will arrive at the dinner table fresh, crisp, and sweet.

While a vegetable is growing in the garden, it naturally creates and holds heat. That "field heat" stays within the plant even during cool parts of the day. After harvest, the plant keeps creating heat, which turns its sugars into starches. Until the vegetable is cooled down, it will keep losing sugars - and its sweet taste!

Hydrocooling - cooling with water - is the most effective way to decrease the core temperature of most crops. By immersing vegetables in cold water right after harvest, you can cool them evenly and retain their crispness. Leafy vegetables reach a cool core temperature in just a few minutes, and then they should be removed from the water so they don't become waterlogged. "Chunky" vegetables like zucchini, carrots, or beans take from 5-15 minutes to cool evenly, and this soaking time can serve as a first rinse.

After removing vegetables from the cooling bath, finish washing them, dry off excess water, and store them in the refrigerator. They should stay moist but not wet. By hydrocooling before you refrigerate, you'll have sweeter, crisper produce that will stay fresh longer than by refrigerating alone. - www.harrisseeds.com

Emerald Ash Borer Update

Locating EAB Purple Boxes

July 2, 2009 - Have you seen these purple boxes? They are traps for the Emerald Ash Borer (EAB), which was recently found in New York State. The boxes are purple because it was discovered that EAB are most attracted to this color. Inside the box is a lure: a bag scented with Manuka Oil. This non-toxic sticky glue will catch bugs flying around the tree.

Recently we placed a few of these traps in Ash trees on Tuscarora. Above, our interns are using a reaching pole to place the trap in a female Ash tree on Upper Mountain Road.
